By Tynin Fries, @TyninFries Hi, friends I'm coming up on back-to-back-to-back weekends of camping trips with a backpacking trip coming up soon, too. So this week I wanted to offer some of my favorite camping meals. Personally, I keep it simple by either cooking over the fire or using my JetBoil system. - Breakfast: Loaded hashbrowns using dehydrated potatoes with pre-cooked bacon, onions and peppers and topped with salsa and shredded cheese. I use my JetBoil to boil water to rehydrate the potatoes and use a pan adapter to fry up the potatoes and reheat all the toppings.
- Lunch: Pasta salad that I make ahead of time and stick, very elegantly, into a ziplock in the cooler. My favorite recipe uses tri-colored rotini, Wishbone's zesty Italian salad dressing, generous amounts of salad supreme seasoning, cherry tomatoes, black olives, broccoli, salami and feta cheese.
- Dinner: Teriyaki foil packs that include pre-made teriyaki chicken, white rice, broccoli and carrots. The veggies will get steamed while the chicken reheats. To avoid burning the rice, double wrap your packs and add a dollop of butter alongside extra teriyaki sauce. And don
't forget tongs so you don't burn yourself!
