Bread can be as nuanced and site-specific as wine. But how can you tell the difference between identical looking loaves? Our Bread Notes series is here to help.

Our house sourdough is an everyday hero: good for everything and good with everything. It’s rich with a variety of different grains, as diverse wheat helps to keep both the soil and our gut healthy.
Grains: Regenerative and heritage wheat, wholemeal emmer, wholemeal spelt, barley and wholemeal rye.

We include pre-industrial types of wheat known as heritage grains in the majority of our recipes. With deep root systems, they are more climate resistant and capable of soaking up more nutrients.
