I circled back because I finally tried that new walking route near the park, and it was exactly the reset I needed.
I started a little earlier than usual, brought water, and kept my phone mostly tucked away so I could actually notice things around me.

I meant to answer sooner, but I wanted to test the recipe first so I could tell you whether it was actually worth making.
The short version is yes, and it turned out better once I stopped trying to rush it.
I mixed everything in one bowl, let it rest for a bit, and used a smaller pan like you suggested.
That made a huge difference because the texture stayed soft instead of drying out around the edges.
I also added a little lemon zest at the end, which made it taste brighter without changing the whole thing.
Next time I might add herbs and see how that goes, but I would keep the base exactly the same.
