You should try roasting the vegetables at a higher temperature next time. I found that 425 degrees works much better for getting that caramelized exterior without making them soggy. Tossing them in olive oil and seasoning just before they go in the oven helps too. The key is giving them enough space on the pan so they aren't steaming. If you want to add some herbs, throw those in during the last five minutes rather than at the start. That trick preserves more of the flavor.
