Oh, I completely forgot to tell you about the hiking trip last weekend! We went up to Mount Rainier and the weather was absolutely perfect. Not a single cloud in the sky. The trail was a bit crowded near the visitor center, but once we got past the first few miles it thinned out nicely. We brought sandwiches and ate lunch overlooking this huge valley. Oh, and there was this incredibly bold marmot that kept trying to get into someone's backpack. It was hilarious. The guy was waving his arms around and the marmot just did not care at all. Eventually he just gave up and let it sniff his backpack zipper. Anyway, I'll send you some photos if I can ever get them off my phone. Hope you're doing well! So I finally tried making sourdough from scratch using that starter I got from Karen. The first attempt was a total disaster. I think I let it ferment for too long and it tasted like vinegar. But the second time around it actually worked! The texture was nice and chewy with a decent crumb structure. I added some rosemary and sea salt on top which gave it a really nice flavor. Honestly, it is a lot more work than I expected. You have to plan like three days ahead. But the smell of fresh bread in the house makes it totally worth it. I have been having a slice with butter every morning for the past week. You should come over and try it sometime. Let me know if you want me to save you a loaf.
