It took a couple of tries to get the hydration right because my kitchen is pretty dry, but the third loaf actually had a decent crumb and the crust was perfectly crackly. I used a mix of bread flour and a little spelt, which gave it a nice nutty flavor. The starter took about ten days to become really active, and I learned that feeding it at the same time every day makes a huge difference. I also started keeping a little notebook with notes on room temperature and how long the bulk fermentation goes, because even a degree or two changes everything. My family has been eating toast with butter and honey almost every morning now, and it feels satisfying to have made something from scratch. I think I will try a whole wheat version next weekend, maybe add some sunflower seeds for texture. Anyway, I just wanted to share that it finally worked out and I am pretty happy with how it turned out.

I finished that book you recommended last night — the one about the trail through the desert. I was skeptical at first because the pacing felt slow, but the second half really pulled me in. The way the author described the landscape made me feel like I was right there under that hot sun, and the main character's quiet determination grew on me.
