Hi Mark — thanks for asking about the pasta recipe. I tried that new one with roasted eggplant and cherry tomatoes last night and it turned out really well. The key was salting the eggplant first to draw out the moisture, then roasting everything at high heat until the edges got crispy. I tossed it with some good olive oil, garlic, and fresh basil from the windowsill planter. The whole thing came together in about 30 minutes of active time. I added a little lemon zest at the end which gave it a nice brightness. Definitely going into the regular rotation. Let me know if you want the exact measurements and I can send them over.
