Starting seeds indoors for the spring garden works best when you begin about six weeks before the last frost date. A heat mat helps with germination for peppers and tomatoes. Fill trays with a light seed starting mix and keep the soil moist but not saturated.
Once the seedlings emerge they need strong light to prevent them from getting leggy. Shop lights placed just a couple inches above the plants work well. Hardening them off before transplanting is important, set them outside for a few hours each day increasing the time over a week.
The process takes some attention but the results are worth it when you see healthy plants going into the ground. I usually start with a few varieties and see what does best in the conditions I can provide.

Making a proper lasagna from scratch starts with the sauce. Taking time with the meat sauce letting it simmer for at least a couple hours develops depth. For the ricotta mixture add a beaten egg some fresh parsley and a pinch of nutmeg.
No boil noodles save time but make sure they are fully covered with sauce so they soften properly. Layering is straightforward, sauce noodles ricotta mozzarella and repeat. Let it rest for about fifteen minutes after baking before cutting into it.
The leftovers taste even better the next day after the flavors have had time to meld together. I usually make a double batch and freeze one for later.
