I finally got around to trying that sourdough starter you gave me last month. It took three days to really get going but by day five it was bubbling like crazy. I fed it twice a day with equal parts flour and water and kept it on the counter near the window where it stays warm. The first loaf came out a little flat but the second one had a nice open crumb and a really good crust. My neighbor suggested I try a cold proof in the fridge overnight so I did that with the third batch and the flavor was noticeably more complex. I also added a tablespoon of olive oil to the dough and that made the texture softer. I think I am finally getting the hang of it. Let me know if you want me to save you a slice next time I bake.

I told my sister I would help her paint her living room this weekend and honestly I forgot how much prep work goes into a single room.
