Hey, thanks for the note earlier! I finally got around to testing that batch of sourdough you asked about. The hydration was off by about 10 percent I think because the crumb was a little tight but the flavor was really nice after a 24 hour cold proof. I used a mix of bread flour and spelt which gave it this nutty aroma. My family said it reminded them of the loaves we used to get at the farmer's market back in the fall. I might try a longer autolyse next time to see if that opens up the structure more. Anyway just wanted to share the results while they were fresh in my mind. Hope you are having a good week.

Also I picked up that book you mentioned last month. The first few chapters are a little slow but the world building is pretty detailed. I usually skim through descriptions but this one kept me interested. About halfway through now and the pacing picked up quite a bit. We should chat about it once we are both done. Oh I almost forgot to tell you about the garden project. We finally got the raised beds built last weekend and the soil mix turned out better than expected. Used a blend of compost from the local nursery and some peat moss and vermiculite. The whole thing took about five hours with two of us working. Already put in some tomato starts and pepper seeds. The weather has been cooperating nicely so I am optimistic about getting a good harvest this year. My neighbor grows zucchini every season and said he would share some tips on trellising. Really looking forward to seeing how everything comes together.
