yeah I finally got around to trying that sourdough recipe you sent me last month. it turned out way better than I expected honestly. the starter took about a week to get active enough and I almost gave up on day three when nothing was happening. but once it started bubbling it was actually kind of fun to feed it every day. the first loaf was a little flat but the second one had a really nice oven spring and the crust was perfect. I used bread flour instead of all-purpose because that's what I had and it seemed to work fine. next time I want to try adding some whole wheat to see how it changes the flavor. anyway I'm hooked now. I've been baking a loaf every weekend and bringing it to work ogANbNqAmC. my neighbor gave me her starter too which is supposed to be like forty years old so I'm curious to see how that one behaves. let me know if you have any other recipes I should try.

so I finally watched that documentary you recommended about the deep sea exploration team. honestly I wasn't sure I'd be into it but it was fascinating. the footage they captured at those depths is incredible. I had no idea there were creatures down there that literally glow in the dark like that. and the pressure they have to engineer for is insane. one of the scientists said that at the depths they're working at the pressure is equivalent to having a full grown elephant standing on your thumb which is just wild to think about. the whole thing made me realize how little we actually know about what's in our own oceans. anyway I'm going down a rabbit hole now watching similar stuff. I found one about the guy who built his own submarine in his garage which is maybe not the smartest idea but pretty impressive. let me know if you have any other documentaries I should check out.
