Yeah I finally got around to organizing the garage last weekend and honestly it was way more satisfying than I expected. I found some old boxes of books I forgot I had. There was a copy of that Murakami novel you recommended last year buried in there. I think I'll actually read it this time. Anyway the shelves look great now and I can actually park the car inside which is a nice change. Let me know if you want to borrow any of the books I found. So I finally tried making sourdough from scratch and it came out better than I thought it would. The starter took about a week to get active and the first loaf was a little flat but the second one had a good crumb and a nice crust. My neighbor gave me some tips about hydration ratios and that helped a lot. I think the next thing I want to try is making bagels. The process seems similar but with the boiling step added. Anyway I brought some into the office and people seemed to like them so that was nice. If you want I can save you a slice next time I bake. Let me know if you have a favorite flour blend because I'm still experimenting and would love any advice. The whole process is pretty therapeutic honestly. There is something about kneading dough that just resets your brain for the day.
