Hey there! I finally tried that sourdough starter recipe you sent me last month. It took a few tries to get the hydration right - my kitchen counter looked like a flour bomb went off the first time. But the third batch actually bubbled up nicely and I baked a small loaf yesterday. The crumb was a bit dense but the crust had that nice crackle. I think I overproofed it by about an hour. Next time I will shorten the bulk ferment and see if that helps. Anyway thanks for the tip about using filtered water instead of tap. That really made a difference. I finally assembled that bookshelf I bought three weekends ago. The instructions were entirely in pictograms and I spent a good twenty minutes trying to figure out which side of the cam lock faced up. My cat supervised the whole process from the middle of the floor and kept trying to claim the cardboard box as a permanent residence. In the end I had two extra screws and one wooden dowel left over but the shelf stands upright and has not collapsed yet so I am calling it a win. The top row is already filled with plant pots and a framed photo. I might reorganize it next week or I might not. We will see how the spirit moves me.
