I tried that mushroom stroganoff recipe you mentioned and it turned out really well. I used a mix of cremini and shiitake and added a little thyme and rosemary at the end. The key was letting the sauce simmer long enough to thicken without adding flour. I served it over egg noodles, but it would probably be great with rice or mashed potatoes too.
