Yeah I finally made it out to that trail we talked about last month. The weather was perfect and the views from the summit were incredible. I ended up taking the longer loop which added about two miles but it was worth it. There was a part where the trail got pretty narrow along the ridge but nothing too scary. I saw a couple of deer near the halfway point which was nice. The parking situation was fine around 8am but when I came back down around noon it was completely full so timing really matters. I brought sandwiches and ate them at the top before heading back down. Next time I want to try the other side of the park where they have those waterfalls you mentioned. Let me know if you want to go together sometime. I think we could manage the whole thing in about five hours with breaks. I finally tried making that pasta dish you told me about and it came out pretty well for a first attempt. I think I used too much garlic though because it was really strong. The sauce needed a little more time to reduce I think because it was a bit runny but the flavor was there. I added some extra herbs since I had them on hand and that helped. The recipe was easier than I expected once I got all the ingredients prepped. I didn't have the right kind of pan so I just used what I had and it seemed to work fine. Next time I want to try adding some vegetables maybe zucchini or bell peppers to make it a bit more substantial. I served it with a simple salad on the side and it was a solid weeknight dinner. I'll send you the modifications I made in case you want to try it differently. The whole thing took about forty minutes from start to finish which was reasonable. I think the key is to let the sauce simmer long enough to develop depth. I'm already looking forward to making it again with the adjustments.
