I think I added too much salt to the soup yesterday really threw off the balance. You could add a potato to absorb some. That usually works but then the potato needs to be removed before serving. Yes I tried that but it also changed the texture a bit. Maybe next time use less soy sauce from the start. Good point I always forget how salty that is. The recipe I use calls for low sodium broth. I always do that. What about adding a little lemon juice at the end? That brightens the flavor without needing more salt. I have not tried that I will give it a shot. Let me know if it works for you.
