Hey, I finally got around to testing the new bread recipe you sent over. The sourdough starter took a bit longer to activate than I expected, but the crumb texture came out incredible. I used a mix of whole wheat and bread flour like you suggested. For the next batch, I might add some rosemary and sea salt to the crust. Have you tried experimenting with different hydration levels? I found that a slightly wetter dough gave me a much airier structure. Let me know if you want to swap notes this weekend. I'm also planning to try that no-knead method for a busy weekday bake. I think it will save a lot of time. Let me know what you think about the flavor profile adjustments. I am also looking into getting a Dutch oven for better heat retention. We're coordinating the neighborhood watch schedule for the summer and wanted to see if you're available for a bi-weekly evening slot. We were thinking Wednesdays from 8 PM to 10 PM. The sign-up sheet is mostly full, but we need a few more people to cover the late spring months. It's a pretty quiet area, but it's great to have everyone participating.
