Remember the hype around veggie burgers that tasted like a ‘real burger’? It turns out faux-meat was largely a flop. While consumers were eager to try new menu items such as the Impossible Burger, few were repeat customers. But now a new kind of approach is taking hold, one that’s embracing veggie-forward food that isn’t masquerading as anything else. As Food Culture writer Dakshana Bascaramurty reports, it’s symbolic of a shift under way in Canada: a reconsideration of what vegetarian food can be, and a challenge to the Western hierarchy of protein that has long placed meat at the top.
