Better Taste Leads to a Bigger Market
Researchers at the Agricultural Research Service’s (ARS) Plant Genetics Research Unit in Columbia MO, along with the University of Missouri and industry partners, have developed a game-changing technology for the plant-based protein industry. This innovation combines multiple beneficial traits in soybean seeds, addressing a long-standing challenge in the market.
Soy is a premium source of protein for humans. It is widely recognized as a nutritional powerhouse, but its characteristic “beany” or “painty” flavors have limited its broader use in plant-based foods.
A multidisciplinary team of researchers combined their expertise in molecular biology, plant breeding, and food science to identify and create a trait combination in soybean that significantly reduces these unpopular off flavors. Learn more...
