I finally tried that pasta recipe you mentioned and it turned out way better than I expected. I was nervous about the sauce separating but I followed your tip about tempering the eggs slowly and it stayed silky smooth. I used a little extra Parmesan because I couldn't help myself and I think that helped too. My partner went back for thirds which never happens. I'm already planning to make it again this weekend maybe with some peas and pancetta thrown in. I also wanted to ask about the white wine you said you use for cooking. I grabbed a bottle of something from the shop but it was a bit too sweet for the sauce. Do you have a go-to brand that's more on the dry side? I figure you've tested a few by now. I spent most of yesterday trying to fix a weird squeak in the floorboard near the kitchen entrance. It turned out to be a loose nail that had worked its way up over time. I tapped it back down with a punch and now the spot is solid and quiet. I also noticed the weather stripping on the back door is starting to crack so I'll probably replace that next weekend. The hardware store had a roll of the good stuff on sale last time I checked. On a totally different note I started listening to that podcast you recommended about urban farming and it's surprisingly addictive. I'm only a few episodes in but they already covered rooftop gardens in Chicago and a guy who grows mushrooms in his basement. I never thought about how much food you can produce in a small space with the right setup. I might try growing some herbs on the balcony this summer just to see if I can keep them alive. I have a track record of killing houseplants but maybe edible ones will be more motivating. Also I finally finished that book I was reading on the train. The ending was a bit rushed but overall I enjoyed the characters enough that I'm glad I stuck with it.
