Hey, I finally got around to trying that new ramen spot you recommended. Honestly, it was fantastic — the broth had so much depth and the noodles were perfectly chewy. I went with the spicy miso option and added a soft egg on top. The place itself is tiny, only about eight seats, but there was no wait when I showed up around 2pm. I also ordered the gyoza as a side and they were crispy on the bottom and juicy inside. I think next time I will try the tantanmen since the person next to me ordered it and it smelled incredible. I tried baking sourdough for the first time last weekend and it came out way better than I expected. I used a starter a friend gave me and fed it for about a week before attempting a loaf. The crust was super crispy and the inside had those nice irregular bubbles you see in bakery bread. I added a little rosemary and flaky salt on top before baking and the smell filled the whole house. My roommate said it was the best bread I have ever made and I honestly agree. I am already planning to try a second batch with some olives mixed into the dough. The whole process takes a lot of patience but it is kind of meditative once you get into the rhythm. I have been watching a bunch of videos about shaping techniques and scoring patterns.
