Yeah I finally caught that documentary about the Pacific Crest Trail last night. My cousin had been telling me to watch it for months so I gave it a shot. Honestly the cinematography was stunning but I felt like it dragged a bit in the second act. The interviews with the thru-hikers were really genuine though and the trail footage made me want to plan a long weekend hike somewhere nearby. I tried that roasted vegetable and quinoa bowl recipe you sent over and it turned out really well. I swapped the sweet potatoes for butternut squash since that was what I had on hand and added a little smoked paprika to the dressing for extra depth. The whole thing came together in about forty minutes and the leftovers held up nicely for lunch the next day. I'm thinking next time I'll throw in some toasted almonds for crunch or maybe a handful of dried cranberries.
