When’s the last time you tasted guava? The sweet-tart flavour of the tropical fruit is perfect in everything from summery drinks and cocktails to salads and desserts. This week’s recipe for guava Eton mess is named after the famous British boarding school, where it was believed to be served at its annual cricket match. (The “mess” comes from the dish’s unfussy, layered presentation – think deconstructed pavlova.) Not a fan of guava? Swap in any seasonal fruit, such as cherries, peaches or plums. Enjoy.
