I don’t know about you, but whenever I build a gingerbread house, most of the gingerbread goes uneaten. All of the icing and gumdrops make it hard to eat, and it just ends up going stale on my kitchen counter. That’s where these muffins come in. They make a delicious breakfast, snack, or dessert for the winter months. Now you can have your gingerbread and eat it too! |

Gingerbread chocolate chip muffins |
While they may not look like anything special at first glance, these muffins contain several ingredients that set them apart. For one, the recipe calls for almond flour, so they’re 100% gluten-free. They’re also sweetened with honey instead of granulated sugar. Honey may have some heart health benefits, but it is important to keep in mind that it still counts as added sugar. |
The recipe also contains walnuts, which, when eaten regularly, may promote cardiovascular health. Walnuts can be a controversial choice when it comes to baked goods — if you’d rather not use them, you can substitute almonds or just leave them out completely. I won’t judge. |
